Recipe: Gluten Free Banana Oat Pancakes

Mash all of these ingredients in a large bowl: (serves 2, or 1 if you've got a huge appetite in the morning like me)
- 1 banana
- 1 egg
- 3 tablespoons of dry oats, I use the one from Quaker (not the instant kind)
- Adjusted amount of Milk
I don't usually measure how much milk I put in because I just keep stirring bit by bit into the bowl till I reach the perfect consistency.
The consistency we are looking for is one that is not too liquid-y. It should still be gooey and you can see that all the oats are covered in the liquid ingredients.
Note: Add a small teaspoon of all-purpose-flour if you'd like your pancakes to be fluffier. Or if your batter is too liquid-y.
But of course, skip the flour altogether if you can because then it would be healthier!
Set your pan to medium heat, and spoon a small amount of butter in.
Let it melt and spoon the pancake batter into the pan.
Watch it and flip it when it turns slightly brown.
(Use a non-stick skillet if you don't want to use so much butter)
Then, stack them up, and top it off with whatever toppings you like! |
For me I put one more banana over the top and I'll usually have it with honey or some dark chocolate sprinkles.

I'm use dark chocolate sprinkles instead of chocolate ganache/sauce because sprinkles contain less oil/butter in them.
If you try to melt sprinkles down in the microwave, you will know that they won't melt into a liquid sauce, but rather become somewhat like a chocolate paste.
That is because it contains less oil in it!
Got this as a gift from my Airbnb host in Amsterdam and apparently it is really good!
So yes, if you can't give up chocolate like myself, this is a healthier alternative!
Plus dark chocolate is always better than milk or white chocolate, cocoa is what is good for you, not the others!
